CHICKEN SAUTÉ WITH PEANUTS
Portions : 4 - Preparation : 15 - Cooking time : about 15 minutes
Ingredients
- 3 chicken breasts, cubed
- 60 ml (4 tablespoons) canola oil
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 15 ml (1 tbsp.) ginger powder
- 8 ml (1/2 tbsp.) red curry paste
- 30 ml (2 tbsp.) Sambal Oelek sauce
- 250 ml (1 cup) coconut milk
- 1/2 chicken stock cube
- 125 ml (1/2 cup) peanut butter
- 1 lime, juice
- 30 ml (2 tbsp) sugar
- salt and pepper to taste
Preparation
- Season chicken cubes with salt and pepper.
- In a skillet or wok over high heat, sauté chicken in a little fat for 3 to 4 minutes.
- Add the onion, garlic and ginger and cook for a further 3 to 4 minutes.
- Add the curry paste, Sambal Oelec, coconut milk, bouillon cube, peanut butter, lime juice and sugar, stir and simmer until the sauce consistency is reached. Check seasoning.
- Serve with rice.
