Celeriac puree

Ingredients

  • 1 large celeriac, cubed
  • 10 ml (2 teaspoons) salt
  • 1 clove garlic
  • qs milk
  • qs water
  • 30 ml (2 tbsp.) unsalted butter
  • salt and pepper to taste

Preparation

  1. Place celeriac, salt and garlic in a saucepan, cover with milk and water (3 parts water to 1 part milk), and bring to a simmer, about 15 to 20 minutes.
  2. Drain the celeriac.
  3. In a bowl containing the celeriac, add the butter and, using a hand blender, purée until smooth. Check seasoning and set aside.
NB: For cooking, the celeriac must be covered with liquid, so adjust the liquid quantities if necessary, bearing in mind that you need 3 portions of water for 1 portion of milk.
