Ingredients
- 1 large celeriac, cubed
- 10 ml (2 teaspoons) salt
- 1 clove garlic
- qs milk
- qs water
- 30 ml (2 tbsp.) unsalted butter
- salt and pepper to taste
Preparation
- Place celeriac, salt and garlic in a saucepan, cover with milk and water (3 parts water to 1 part milk), and bring to a simmer, about 15 to 20 minutes.
- Drain the celeriac.
- In a bowl containing the celeriac, add the butter and, using a hand blender, purée until smooth. Check seasoning and set aside.
