Pea purée

PEA PURÉE

Portions : 4 - Preparation & Cooking time : 10 minutes

Ingredients

  • 400 g (13.5 oz) peas
  • 1 onion, thinly sliced
  • 15 ml (1 tablespoon) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 30 gr (1 oz) butter
  • 100 ml (2/5 cup) 35% cream
  • 1 clove garlic, minced
  • salt and pepper to taste

Preparation

  1. Cook the peas in boiling water for 5 to 7 minutes.
  2. In a non-stick frying pan, sauté the onion in a little of the chosen fat.
  3. Add the garlic and sauté for 1 minute, stirring constantly.
  4. Using a hand blender or food processor, blend the peas, onion and garlic, adding the butter, cream, salt and pepper to taste. Check for seasoning. Keep warm.
