PEA PURÉE

Ingredients
- 400 g (13.5 oz) peas
- 1 onion, thinly sliced
- 15 ml (1 tablespoon) fat of your choice (butter, oil or Mycryo cocoa butter)
- 30 gr (1 oz) butter
- 100 ml (2/5 cup) 35% cream
- 1 clove garlic, minced
- salt and pepper to taste
Preparation
- Cook the peas in boiling water for 5 to 7 minutes.
- In a non-stick frying pan, sauté the onion in a little of the chosen fat.
- Add the garlic and sauté for 1 minute, stirring constantly.
- Using a hand blender or food processor, blend the peas, onion and garlic, adding the butter, cream, salt and pepper to taste. Check for seasoning. Keep warm.
