SHRIMP QUESADILLAS
Portions: 4 - Preparation time: 10 minutes - Cooking time: 20 minutes
Ingredients
- 250 ml (1 cup) red bell pepper, diced
- 30 ml (2 tablespoons) fat of your choice (butter, olive oil, Mycryo cocoa butter)
- Seeds from 2 ears of corn, cooked
- 1 Jalapenos, brunoise
- 16 shrimp 31/40
- 5 ml (1 tsp.) smoked paprika
- 15 ml (1 tbsp) garlic, minced
- 125 ml (1/2 cup) fresh cilantro, chopped
- 8 8'' fajita patties
- 60 ml (4 tbsp.) onion jam
- 750 ml (3 cups) Tex Mex Cracker Barrel cheese
- salt and pepper to taste
Preparation
- In a hot skillet, brown the peppers, corn and jalapenos in the fat of your choice over high heat for 3 to 4 minutes. Set aside in a bowl.
- In the same pan, brown the shrimps for 3 minutes on each side, then add the paprika, garlic and coriander. Check seasoning.
- Add the shrimp to the bowl and toss. Check seasoning.
- Spread the onion jam on the bottom of 4 fajita patties.
- Divide among the prepared shrimp and vegetable mixture. Sprinkle with cheese. Place a patty on top.
- In a hot, fat-free frying pan, brown the patties for 2 minutes on each side.
