SPINACH AND CHEESE QUICHE
Portions : 4 people - Preparation time : 10 minutes - Cooking time : 20 to 30 minutes
Ingredients
- 1l (4 cups) fresh spinach leaves
- 2 garlic cloves, chopped
- 30 ml (2 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 5 ml (1 tsp.) nutmeg, grated
- 4 whole eggs
- 80 ml (1/3 cup) milk
- 80 ml (1/3 cup) 35% M.F. cream
- 1 shortcrust pastry base
- 125 ml (1/2 cup) Mozzarella, grated
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 180°C (360°F).
- In a hot skillet, sweat the spinach and garlic in the fat of your choice. Season with salt and pepper and set aside.
- Whisk eggs in a bowl, adding salt, pepper and nutmeg, followed by milk and cream.
- Place the shortcrust pastry in a tart tin. Spread the spinach and mozzarella over the base of the tart, then pour over the prepared mixture.
- Bake for 20-30 minutes.
