Fried rice with shrimp

FRIED RICE WITH SHRIMP

Portions : 4 - Preparation : 10 minutes - Cooking : 10 minutes

Ingredients

  • 1 onion, chopped
  • 45 ml (3 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 16 shrimp, shelled
  • 250 ml (1 cup) snow peas, halved
  • 1 garlic clove, minced
  • 15 ml (1 tbsp.) ginger
  • 1 red or yellow bell pepper, julienned
  • 15 ml (1 tbsp.) hot sauce (Sambal Oelek)
  • 60 ml (4 tbsp.) soy sauce
  • 60 ml (4 tbsp.) sesame oil
  • 4 portions white rice, cooked
  • 1 mango, cubed
  • 1 green onion, sliced
  • 60 ml (4 tbsp.) crushed peanuts
  • salt and freshly ground pepper to taste

Preparation

  1. In a skillet over high heat, sauté the onion in the fat of your choice for 2 minutes. Add the shrimp and cook for a further 4 minutes.
  2. Add the snow peas, garlic, ginger and bell pepper and cook for a further 1 minute.
  3. Add the hot sauce, soy sauce and sesame oil, stir and check the seasoning.
  4. Add the rice and sauté in the pan.
  5. Add the mango cubes, green onion and peanuts.
