FRIED RICE WITH SHRIMP
Portions : 4 - Preparation : 10 minutes - Cooking : 10 minutes
Ingredients
- 1 onion, chopped
- 45 ml (3 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 16 shrimp, shelled
- 250 ml (1 cup) snow peas, halved
- 1 garlic clove, minced
- 15 ml (1 tbsp.) ginger
- 1 red or yellow bell pepper, julienned
- 15 ml (1 tbsp.) hot sauce (Sambal Oelek)
- 60 ml (4 tbsp.) soy sauce
- 60 ml (4 tbsp.) sesame oil
- 4 portions white rice, cooked
- 1 mango, cubed
- 1 green onion, sliced
- 60 ml (4 tbsp.) crushed peanuts
- salt and freshly ground pepper to taste
Preparation
- In a skillet over high heat, sauté the onion in the fat of your choice for 2 minutes. Add the shrimp and cook for a further 4 minutes.
- Add the snow peas, garlic, ginger and bell pepper and cook for a further 1 minute.
- Add the hot sauce, soy sauce and sesame oil, stir and check the seasoning.
- Add the rice and sauté in the pan.
- Add the mango cubes, green onion and peanuts.
