HERB-CRUSTED FISH ROLLS

Ingredients
- 6 to 8 sea bream fillets, skinless
- 90 ml (6 tablespoons) Bu white wine
- 75 ml (5 tablespoons) unsalted butter
- 60 ml (4 tbsp.) parsley leaves, chopped
- 2 garlic cloves, chopped
- 60 ml (4 tbsp.) basil leaves, chopped
- 60 ml (4 tbsp.) tarragon leaves, chopped
- 15 ml (1 tablespoon) honey
- 125 ml (1/2 cup) breadcrumbs
- 1 pinch Espelette pepper
- salt and freshly ground pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- Roll each fish fillet on itself.
- Arrange the fish rolls side by side in a gratin dish. Season with salt and pepper and add the wine.
- Mix the remaining ingredients in a bowl.
- Spread the mixture over the fish rolls.
- Bake in the oven for 20 minutes.
- Serve with mashed potatoes and seasonal vegetables.
