QUINOA AND CITRUS SALAD

Ingredients
- 3 oranges
- 1 l (4 cups) quinoa, cooked
- 500 ml (2 cups) northern shrimp
- 2 avocados, cubed
- 2 tomatoes, cubed
- 90 ml (6 tablespoons) olive oil
- 1 lemon, juice
- salt and freshly ground pepper to taste
Preparation
- Using a knife, peel the oranges. Then remove the orange segments.
- In a bowl, combine quinoa, shrimp, avocado cubes, tomato cubes, orange segments, olive oil, lemon, salt and pepper. Check the seasoning.
