Quinoa and citrus salad

QUINOA AND CITRUS SALAD

Portions : 4 - Preparation time : 10 minutes

Ingredients

  • 3 oranges
  • 1 l (4 cups) quinoa, cooked
  • 500 ml (2 cups) northern shrimp
  • 2 avocados, cubed
  • 2 tomatoes, cubed
  • 90 ml (6 tablespoons) olive oil
  • 1 lemon, juice
  • salt and freshly ground pepper to taste

Preparation

  1. Using a knife, peel the oranges. Then remove the orange segments.
  2. In a bowl, combine quinoa, shrimp, avocado cubes, tomato cubes, orange segments, olive oil, lemon, salt and pepper. Check the seasoning.
