PORK AND ARUGULA PANINI SANDWICH

INGREDIENTS
- 4 Panini breads, ciabattas or small baguettes
- 1 cup Mini-roquette
- 1 Apple or pear, thinly sliced
- 5 oz Sharp cheddar cheese, sliced
- 1 tbsp. Olive oil
- 4 Large Québec pork cutlets, 1/3 lb (150 g) each
- 1/2 to 1 tsp. paprika
- Salt and freshly ground pepper to taste
PREPARATION
- Cut loaves in half lengthwise and open to garnish with arugula, apple and cheddar cheese. Set aside for later.
- Heat oil in a frying pan over high heat and cook cutlets for 1-2 minutes on each side, depending on thickness. Sprinkle with paprika and season generously.
- Add the pork to the buns and close the sandwiches.
- Heat a large skillet over medium-high heat.
- Place the sandwiches in the pan and brown the bread on each side, flattening it.
