PORK AND ARUGULA PANINI SANDWICH

INGREDIENTS

  • 4 Panini breads, ciabattas or small baguettes
  • 1 cup Mini-roquette
  • 1 Apple or pear, thinly sliced
  • 5 oz Sharp cheddar cheese, sliced
  • 1 tbsp. Olive oil
  • 4 Large Québec pork cutlets, 1/3 lb (150 g) each
  • 1/2 to 1 tsp. paprika
  • Salt and freshly ground pepper to taste

PREPARATION

  1. Cut loaves in half lengthwise and open to garnish with arugula, apple and cheddar cheese. Set aside for later.
  2. Heat oil in a frying pan over high heat and cook cutlets for 1-2 minutes on each side, depending on thickness. Sprinkle with paprika and season generously.
  3. Add the pork to the buns and close the sandwiches.
  4. Heat a large skillet over medium-high heat.
  5. Place the sandwiches in the pan and brown the bread on each side, flattening it.
