Grilled salmon and stewed onions à la hoegaarden

HOEGAARDEN-STYLE GRILLED SALMON AND STEWED ONIONS

Portions : 4 - Preparation : 10 minutes - Cooking : 15 minutes

Ingredients

  • 1 bottle Hoegaarden beer
  • 2 red onions, thinly sliced
  • 30 ml (2 tablespoons) olive oil
  • 1 clove garlic, minced
  • 15 ml (1 tbsp.) ginger, chopped
  • ½ orange, zest
  • 15 ml (1 tbsp.) honey
  • 15 ml (1 tbsp.) white balsamic vinegar
  • 4 salmon steaks
  • Salt and pepper to taste

Preparation

  1. Preheat BBQ to maximum.
  2. In a saucepan, brown the onions in a little olive oil for 2 to 3 minutes. Add the garlic, ginger and zest and sauté for a further 1 minute.
  3. Deglaze with Hoegaarden. Add honey and balsamic vinegar. Simmer until the liquid has evaporated and the onions are very soft.
  4. Adjust the seasoning and keep warm.
  5. Season the salmon steaks with salt and pepper and place on the BBQ grill. Reduce the heat and cook for 2 minutes on each side, with the lid closed.
  6. Serve the salmon steaks with the onion compote and a few home fries.
