VEGETABLE AND TOFU STIR-FRY

Ingredients
- 750 ml (3 cups) firm tofu, cubed
- 60 ml (4 tablespoons) canola oil
- 2 garlic cloves, minced
- 30 ml (2 tbsp.) ginger, grated
- 1 red bell pepper, julienned
- 250 ml (1 cup) snow peas
- 250 ml (1 cup) soybeans
- 250 ml (1 cup) coconut milk
- 60 ml (4 tablespoons) peanut butter
- 5 ml (1 tsp.) Sambal Oelek hot sauce
- 60 ml (4 tablespoons) soy sauce
- 60 ml (4 tablespoons) sesame oil
- 4 portions white rice, cooked
- 2 green onions, sliced
- salt and pepper to taste
Preparation
- In a hot skillet, brown tofu in canola oil for 2 to 3 minutes. Add garlic, ginger, bell bell pepper, snow peas and soybeans and sauté for 2 minutes. Add coconut milk, peanut butter, hot sauce, soy sauce and sesame oil. Check seasoning.
- In each bowl, divide the rice, then the tofu stir-fry, and top with the green onions.
