Tabbouleh Shrimps

Ingredients

  • 300 ml medium couscous semolina
  • 1 bunch coriander, chopped
  • 2 gray shallots, chopped
  • 2 cloves garlic, chopped
  • 6 tablespoons olive oil
  • 2 tablespoons Masago fish roe
  • 2 cups cooked shrimp, chopped
  • 1 lemon juice
  • 1 lime juice
  • 1 red bell pepper, diced
  • salt and pepper to taste

Preparation

  1. Rehydrate the semolina with boiling water (as indicated on the packet), cover with cling film and leave to swell for a few minutes.
  2. Add the ingredients to the semolina. Adjust seasoning and chill until ready to serve.
