Beef tartar with whisky and honey

Ingredients

The mayonnaise

  • 2 egg yolks
  • 15 ml (1 tablespoon) Dijon mustard
  • 5 ml (1 tsp.) honey
  • q.s. canola oil
  • 30 ml (2 tbsp.) whisky
  • salt and pepper to taste

The tartar

  • 400 g (14 oz.) beef round inside, trimmed and diced
  • 15 ml (1 tbsp.) shallot, chopped
  • 45 ml (3 tbsp.) gherkins, diced
  • 15 ml (1 tbsp.) capers, chopped
  • 15 ml (1 tbsp.) fresh flat-leaf parsley, chopped
  • 10 ml (2 tsp.) sherry vinegar
  • salt and pepper to taste

Preparation

The mayonnaise

  1. In a bowl, combine egg yolks, mustard and a pinch of salt and pepper.
  2. Add the honey, then whisk in the oil in a thin stream.
  3. Add whisky. Check seasoning.

The tartar

  1. In a bowl, combine meat, shallots, gherkins, capers and parsley.
  2. Add mayonnaise and sherry vinegar. Check seasoning.
  3. Using a cookie cutter or spoon, shape into tartar portions.
  4. Serve with bread croutons.

Nb: For new flavours, bison or elk are good alternatives to beef.
