Ingredients
The mayonnaise
- 2 egg yolks
- 15 ml (1 tablespoon) Dijon mustard
- 5 ml (1 tsp.) honey
- q.s. canola oil
- 30 ml (2 tbsp.) whisky
- salt and pepper to taste
The tartar
- 400 g (14 oz.) beef round inside, trimmed and diced
- 15 ml (1 tbsp.) shallot, chopped
- 45 ml (3 tbsp.) gherkins, diced
- 15 ml (1 tbsp.) capers, chopped
- 15 ml (1 tbsp.) fresh flat-leaf parsley, chopped
- 10 ml (2 tsp.) sherry vinegar
- salt and pepper to taste
Preparation
The mayonnaise
- In a bowl, combine egg yolks, mustard and a pinch of salt and pepper.
- Add the honey, then whisk in the oil in a thin stream.
- Add whisky. Check seasoning.
The tartar
- In a bowl, combine meat, shallots, gherkins, capers and parsley.
- Add mayonnaise and sherry vinegar. Check seasoning.
- Using a cookie cutter or spoon, shape into tartar portions.
- Serve with bread croutons.
Nb: For new flavours, bison or elk are good alternatives to beef.
