SALMON TARTAR WITH HERBS AND PEAR
Portions : 4 - Preparation time : 15 minutes
Ingredients
- 500 g (17 oz) fresh salmon, small cubes
- 125 ml (1/2 cup) smoked salmon, finely chopped
- 1 shallot, finely chopped
- 1 sprig dill, trimmed and chopped
- 1 pear, brunoise
- 30 ml (2 tbsp.) white balsamic vinegar
- 30 ml (2 tbsp.) olive oil
- Green Tabasco sauce as needed
- Bread or bagel croutons
- salt and freshly ground pepper to taste
Preparation
- In a bowl, combine salmon cubes, smoked salmon, shallot, dill and pear.
- In another bowl, mix vinegar, oil and Tabasco.
- Pour the resulting sauce over the salmon mixture and check the seasoning.
