Salmon tartar with herbs and pear

SALMON TARTAR WITH HERBS AND PEAR

Portions : 4 - Preparation time : 15 minutes

Ingredients

  • 500 g (17 oz) fresh salmon, small cubes
  • 125 ml (1/2 cup) smoked salmon, finely chopped
  • 1 shallot, finely chopped
  • 1 sprig dill, trimmed and chopped
  • 1 pear, brunoise
  • 30 ml (2 tbsp.) white balsamic vinegar
  • 30 ml (2 tbsp.) olive oil
  • Green Tabasco sauce as needed
  • Bread or bagel croutons
  • salt and freshly ground pepper to taste

Preparation

  1. In a bowl, combine salmon cubes, smoked salmon, shallot, dill and pear.
  2. In another bowl, mix vinegar, oil and Tabasco.
  3. Pour the resulting sauce over the salmon mixture and check the seasoning.
