ASIAN-STYLE TUNA TARTARE WITH TEMPURA

Ingredients
- 600 g (20 ½ oz) fresh Albacore tuna, cubed
- 60 ml (4 tablespoons) black olives, chopped
- 60 ml (4 tablespoons) olive oil
- 1 avocado, small cubes
- 1 shallot, chopped
- ¼ bunch cilantro, leaves removed, chopped
- 15 ml (1 tbsp.) sesame oil
- 1 lime, juice
- 1 pinch chili pepper of choice
- 30 ml (2 tbsp.) sesame seeds
- 250 ml (1 cup) crisp tempura
- salt and freshly ground pepper to taste
Preparation
- In a bowl, combine the tuna, olives, olive oil, avocado, shallot, coriander, sesame oil and lime juice. Add the chilli, salt and pepper and check the seasoning. Sprinkle with sesame seeds.
- Using a cookie cutter, arrange a layer of tempura, followed by a layer of tartare.
