Asian-style tuna tartare with tempura

ASIAN-STYLE TUNA TARTARE WITH TEMPURA

Portions : 4 - Preparation time : 15 minutes

Ingredients

  • 600 g (20 ½ oz) fresh Albacore tuna, cubed
  • 60 ml (4 tablespoons) black olives, chopped
  • 60 ml (4 tablespoons) olive oil
  • 1 avocado, small cubes
  • 1 shallot, chopped
  • ¼ bunch cilantro, leaves removed, chopped
  • 15 ml (1 tbsp.) sesame oil
  • 1 lime, juice
  • 1 pinch chili pepper of choice
  • 30 ml (2 tbsp.) sesame seeds
  • 250 ml (1 cup) crisp tempura
  • salt and freshly ground pepper to taste

Preparation

  1. In a bowl, combine the tuna, olives, olive oil, avocado, shallot, coriander, sesame oil and lime juice. Add the chilli, salt and pepper and check the seasoning. Sprinkle with sesame seeds.
  2. Using a cookie cutter, arrange a layer of tempura, followed by a layer of tartare.
