Tartiflette with local cheese

TARTIFLETTE WITH LOCAL CHEESE

Portions : 4 - Preparation time : 15 minutes - Cooking time : 35 minutes approx.

Ingredients

  • 2 onions, thinly sliced
  • 30 ml (2 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 125 ml (½ cup) white wine
  • 1 sprig thyme, leaves removed
  • 4 slices bacon, crisp, chopped
  • 125 ml (½ cup) 35% cream
  • 6 Yukon Gold potatoes, thinly sliced
  • 8 to 12 slices Oka cheese
  • salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. In a hot skillet, sauté the onion in the fat of your choice until browned.
  3. Add the white wine and thyme and reduce by half.
  4. Add the crisp bacon and cream. Check seasoning.
  5. Remove from the heat, add the potato slices and stir.
  6. Spread the mixture in a gratin dish, cover with slices of Oka cheese and bake in the oven for 30 minutes, the time needed to cook potatoes.
