FRESH GOAT'S CHEESE TARTINE WITH STELLA BEER SYRUP

Ingredients
- 1 bottle Stella Artois beer
- 60 ml (4 tablespoons) sugar
- 15 ml (1 tablespoon) 35% cream
- 15 ml (1 tbsp) balsamic vinegar
- 190 ml (3/4 cup) fresh goat's cheese
- 30 ml (2 tbsp.) olive oil
- 1 clove garlic, minced
- 1 sprig thyme, leaves removed
- 4 slices farmhouse bread, fairly thick
- salt and pepper to taste
- 4 portions green salad
Preparation
- Preheat the BBQ to maximum.
- In a saucepan, bring beer to a simmer, then add sugar. Reduce for about 10 minutes until syrupy. Add the cream and balsamic vinegar, season and chill.
- In a bowl, mix the goat's cheese, olive oil, garlic and thyme. Once the mixture is smooth, spread it on the bread slices.
- Place bread slices on BBQ grill. Cook for one minute, then turn off the heat under the slices.
- Close the lid and cook for 5 minutes on indirect heat.
- Just before serving, pour a little of the prepared syrup over the slices and serve with a nice green salad.
