Yellowfin tuna, sesame, quinoa, sunflower seeds, avocado and daikon poké

POKÉ YELLOWFIN TUNA, SESAME SEEDS, QUINOA, SUNFLOWER SEEDS, AVOCADO AND DAIKON

Ingredients

  • 400 g (13 1/2 oz) yellowfin tuna, cubed
  • 60 ml (4 tablespoons) sesame oil
  • 5 ml (1 tsp.) Sriracha hot sauce
  • 30 ml (2 tablespoons) soy sauce
  • 60 ml (4 tablespoons) rice vinegar
  • 60 ml (4 tablespoons) canola oil
  • 4 servings quinoa, cooked
  • 250 ml (1 cup) daikon, grated
  • 1 avocado, sliced
  • 30 ml (2 tablespoons) sesame seeds
  • 30 ml (2 tablespoons) sunflower seeds
  • 125 ml (1/2 cup) coriander leaves
  • salt and freshly ground pepper to taste

Preparation

  1. In a bowl, combine tuna cubes, sesame oil, half the hot sauce and soy sauce.
  2. In another bowl, combine rice vinegar, canola oil, remaining hot sauce, salt and pepper. Check seasoning.
  3. In each serving bowl, divide the quinoa, daikon, avocado slices, sesame and sunflower seeds, then the prepared sauce and a few coriander leaves on top.
