Tortelloni with matane shrimp and quebec asparagus

TORTELLONI WITH MATANE SHRIMP AND QUEBEC ASPARAGUS

Ingredients

  • 1 package Olivieri Aged Reggiano Parmesan Tortelloni with exclusive cheeses
  • 1 bunch Québec asparagus, trimmed and cleaned
  • 45 ml (3 tbsp.) olive oil
  • 2 garlic cloves, chopped
  • 1 sprig thyme, leaves removed
  • 45 ml (3 tbsp.) white or red balsamic vinegar
  • 500 ml (2 cups) Matane shrimp
  • 60 ml (4 tbsp.) 35% cream
  • 1 pinch cayenne pepper
  • 125 ml (1/2 cup) freshly grated Parmesan cheese
  • Salt and pepper to taste

Preparation

  1. Cook Tortelloni according to package directions.
  2. In a large skillet, sauté the asparagus in olive oil over high heat for 2 minutes.
  3. Add the garlic, thyme and balsamic vinegar. Cook for 2 minutes, then season with salt and pepper. Set aside in a bowl.
  4. In the same pan, sauté the shrimps in a little olive oil for 2 minutes.
  5. Add the cream, cayenne pepper, asparagus, tortelloni and mix.
  6. Check the seasoning.
  7. Just before serving, sprinkle with grated Parmesan.
