TORTELLONI WITH MATANE SHRIMP AND QUEBEC ASPARAGUS

Ingredients
- 1 package Olivieri Aged Reggiano Parmesan Tortelloni with exclusive cheeses
- 1 bunch Québec asparagus, trimmed and cleaned
- 45 ml (3 tbsp.) olive oil
- 2 garlic cloves, chopped
- 1 sprig thyme, leaves removed
- 45 ml (3 tbsp.) white or red balsamic vinegar
- 500 ml (2 cups) Matane shrimp
- 60 ml (4 tbsp.) 35% cream
- 1 pinch cayenne pepper
- 125 ml (1/2 cup) freshly grated Parmesan cheese
- Salt and pepper to taste
Preparation
- Cook Tortelloni according to package directions.
- In a large skillet, sauté the asparagus in olive oil over high heat for 2 minutes.
- Add the garlic, thyme and balsamic vinegar. Cook for 2 minutes, then season with salt and pepper. Set aside in a bowl.
- In the same pan, sauté the shrimps in a little olive oil for 2 minutes.
- Add the cream, cayenne pepper, asparagus, tortelloni and mix.
- Check the seasoning.
- Just before serving, sprinkle with grated Parmesan.
