SPANISH TORTILLAS WITH CARAMELIZED ONIONS
Portions : 4 - Preparation : 5 minutes - Cooking time : 20 to 30 minutes
Ingredients
- 4 potatoes
- 1 onion, thinly sliced
- 60 ml (4 tablespoons) olive oil
- 15 ml (1 tbsp.) brown sugar
- 2 sprigs thyme, leaves removed
- 2 garlic cloves, minced
- 6 eggs, beaten
- salt and freshly ground pepper to taste
Preparation
- Add the potatoes to a pan of cold, salted water and bring to the boil. Boil until the potatoes are half cooked.
- Meanwhile, in a hot frying pan, sauté the onion in the fat of your choice until browned.
- Add the brown sugar, thyme and garlic and sauté for a further 2 minutes.
- On the work surface, cut the potatoes into thin slices.
- Stir in the potatoes, then add the beaten eggs and cook over low heat.
- Using a plate, turn over the contents of the pan and finish cooking the tortillas for a few minutes.
