Spanish tortillas with caramelized onions

SPANISH TORTILLAS WITH CARAMELIZED ONIONS

Portions : 4 - Preparation : 5 minutes - Cooking time : 20 to 30 minutes

Ingredients

  • 4 potatoes
  • 1 onion, thinly sliced
  • 60 ml (4 tablespoons) olive oil
  • 15 ml (1 tbsp.) brown sugar
  • 2 sprigs thyme, leaves removed
  • 2 garlic cloves, minced
  • 6 eggs, beaten
  • salt and freshly ground pepper to taste

Preparation

  1. Add the potatoes to a pan of cold, salted water and bring to the boil. Boil until the potatoes are half cooked.
  2. Meanwhile, in a hot frying pan, sauté the onion in the fat of your choice until browned.
  3. Add the brown sugar, thyme and garlic and sauté for a further 2 minutes.
  4. On the work surface, cut the potatoes into thin slices.
  5. Stir in the potatoes, then add the beaten eggs and cook over low heat.
  6. Using a plate, turn over the contents of the pan and finish cooking the tortillas for a few minutes.
