Ingredients
- 8 slices crisp bacon, chopped
- 4 trout fillets, skin on
- 30 ml (2 tbsp.) butter, room temperature
- 60 ml (4 tbsp.) miso
- 60 ml (4 tbsp.) honey
- 1 clove garlic, minced
- 1 lemon, zest
- ¼ bunch parsley, leaves removed, chopped
- 60 ml (4 tablespoons) panko breadcrumbs
- Pepper to taste
Preparation
- Preheat the bbq on high.
- In a bowl, combine butter, miso, honey, garlic, lemon zest and parsley.
- Add bacon, panko breadcrumbs and pepper to taste.
- Spread the mixture over the 4 trout fillets.
- Place the trout fillets skin-side down on the bbq grill, close the bbq lid and bake on one side for 8 minutes.
