Trout miso bacon

Ingredients

  • 8 slices crisp bacon, chopped
  • 4 trout fillets, skin on
  • 30 ml (2 tbsp.) butter, room temperature
  • 60 ml (4 tbsp.) miso
  • 60 ml (4 tbsp.) honey
  • 1 clove garlic, minced
  • 1 lemon, zest
  • ¼ bunch parsley, leaves removed, chopped
  • 60 ml (4 tablespoons) panko breadcrumbs
  • Pepper to taste

Preparation

  1. Preheat the bbq on high.
  2. In a bowl, combine butter, miso, honey, garlic, lemon zest and parsley.
  3. Add bacon, panko breadcrumbs and pepper to taste.
  4. Spread the mixture over the 4 trout fillets.
  5. Place the trout fillets skin-side down on the bbq grill, close the bbq lid and bake on one side for 8 minutes.
