HUMMUS AND GRILLED HAM BLINIS

Ingredients
- 16 homemade blinis
- 500 ml (2 cups) chickpeas, cooked
- 100 ml (3/8 cup) Tahine (sesame seeds, puréed)
- 2 cloves garlic
- 80 ml (1/3 cup) lemon juice
- 125 ml (1/2 cup) olive oil
- 80 ml (1/3 cup) water
- salt and pepper to taste
- 16 white ham cubes, 1ˮx1ˮ
- 15 ml (1 tablespoon) Mycryo cocoa butter
- Salt and pepper to taste
Preparation
Hummus
- In the bowl of a food processor, add all ingredients and blend until creamy. Check seasoning.
- In a bowl, sprinkle ham cubes with Mycryo cocoa butter.
- In a ridged frying pan, brown the ham cubes on both sides over high heat without fat.
Assembly
Place a spoonful of hummus on the blinis and add a cube of grilled ham.
