This delicious waffle recipe to start the year is perfect for a snack, brunch, or simply lunch.
The Quebec touch to this recipe: blueberries! If you don't have fresh blueberries, you can use frozen ones, which will be perfect for this recipe.
For approximately 10 round waffles:
- 2 cups fresh or frozen blueberries
- 2 cups all-purpose flour
- ½ cup cornstarch
- 2 tsp baking powder
- 1 pinch of salt
- ½ cup brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 2 cups of milk
- ½ cup butter, melted
Preparation
- In a bowl, mix the flour, starch, baking powder, salt and brown sugar.
- Once these ingredients are homogeneous, make a well in the middle and add the eggs, milk, melted butter and vanilla.
- Mix with a whisk. Once the dough is smooth and lump-free, let it rest for 1 hour at room temperature.
- Heat the waffle iron and brush it lightly with vegetable oil.
- Pour about ¾ cup of the waffle mix into the center, then add a few blueberries.
- Close the waffle iron and cook until the waffle is golden brown.
- Repeat the operation until all the dough is used up.
