Blueberry Waffles

This delicious waffle recipe to start the year is perfect for a snack, brunch, or simply lunch.
The Quebec touch to this recipe: blueberries! If you don't have fresh blueberries, you can use frozen ones, which will be perfect for this recipe.

For approximately 10 round waffles:

  • 2 cups fresh or frozen blueberries
  • 2 cups all-purpose flour
  • ½ cup cornstarch
  • 2 tsp baking powder
  • 1 pinch of salt
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 cups of milk
  • ½ cup butter, melted

Preparation

  1. In a bowl, mix the flour, starch, baking powder, salt and brown sugar.
  2. Once these ingredients are homogeneous, make a well in the middle and add the eggs, milk, melted butter and vanilla.
  3. Mix with a whisk. Once the dough is smooth and lump-free, let it rest for 1 hour at room temperature.
  4. Heat the waffle iron and brush it lightly with vegetable oil.
  5. Pour about ¾ cup of the waffle mix into the center, then add a few blueberries.
  6. Close the waffle iron and cook until the waffle is golden brown.
  7. Repeat the operation until all the dough is used up.

The waffles will be delicious warm with a little maple syrup...
