Oysters and Spanish salsa

OYSTERS AND SPANISH SALSA

Ingredients

  • 2 cherry peppers, chopped
  • ½ clove garlic, chopped
  • 90 ml (6 tablespoons) olive oil
  • 90 ml (6 tablespoons) wine vinegar
  • 3 anchovy fillets, chopped
  • 2 green onions, thinly sliced
  • 24 oysters
  • salt and freshly ground pepper to taste

Preparation

  1. In a bowl, combine chiles, garlic, oil, vinegar, anchovies, green onions and pepper. Check seasoning for salt and pepper.
  2. Open the oysters and remove from their shells.
  3. Add 1 small amount of salsa to each oyster.
