Ingredients
- 4 eggs, yolks
- 120 ml (8 tablespoons) sugar
- 1/2 lemon, zest
- 60 ml (4 tablespoons) Cointreau
- 1 pinch salt
- 375 ml (1 ½ cups) orange juice
- 2 blood oranges, peeled raw, cut into segments
- 12 raspberries or strawberries
- 4 cookies (cigarettes, ladyfingers, cat's tongues, etc.)
Preparation
- In a bowl, combine egg yolks, sugar, zest, Cointreau and salt.
- In a bain-marie, using an electric mixer, beat the mixture vigorously for 3 minutes.
- Gradually add the orange juice.
- Once the mixture is smooth, light and frothy, remove from heat.
- Place the orange segments and berries in 4 ramekins and pour the sabayon over them.
- Serve with cookies.
