Citrus Sabayon

Ingredients

  • 4 eggs, yolks
  • 120 ml (8 tablespoons) sugar
  • 1/2 lemon, zest
  • 60 ml (4 tablespoons) Cointreau
  • 1 pinch salt
  • 375 ml (1 ½ cups) orange juice
  • 2 blood oranges, peeled raw, cut into segments
  • 12 raspberries or strawberries
  • 4 cookies (cigarettes, ladyfingers, cat's tongues, etc.)

Preparation

  1. In a bowl, combine egg yolks, sugar, zest, Cointreau and salt.
  2. In a bain-marie, using an electric mixer, beat the mixture vigorously for 3 minutes.
  3. Gradually add the orange juice.
  4. Once the mixture is smooth, light and frothy, remove from heat.
  5. Place the orange segments and berries in 4 ramekins and pour the sabayon over them.
  6. Serve with cookies.
Optional: Use a torch to brown the top.
