Spaghetti squash with bolognese sauce (V.1)

SQUASH SPAGHETTI WITH BOLOGNESE SAUCE

Portions : 4 - Preparation time : 15 minutes - Cooking time : 45 minutes

Ingredients

  • 1 large spaghetti squash
  • 2 sprigs thyme
  • 2 garlic cloves, crushed
  • 60 ml (1/4 cup) olive oil
  • 750 ml (3 cups) Bolognese sauce
  • ½ bunch basil, leaves removed
  • 250ml (1 cup) grated Parmesan cheese
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 180° C (350° F).
  2. Cut the squash in half and remove the seeds.
  3. Place the two squash halves on a baking sheet.
  4. Add a sprig of thyme and a clove of garlic to each cavity.
  5. Bake for 35 to 40 minutes.
  6. Once the squash is cooked, remove the garlic and thyme, then use a fork to gently scrape out the flesh in the form of strands (spaghetti).
  7. Collect all the flesh in a large bowl, add a little olive oil and season lightly with salt and pepper.
  8. Heat the Bolognese sauce in a frying pan. Add the squash and cook for 2 minutes.
  9. Divide between serving plates, then add the fresh basil and Parmesan.
