CHICKEN BURGER WITH JALAPENO CHUTNEY
Portions : 4 - Preparation and marinating : 15 minutes - Cooking : 30 to 45 minutes
Ingredients
The chutney
- 6 jalapenos (seeds and membranes removed), finely chopped
- 250 ml (1 cup) onion, chopped
- 2 garlic cloves, chopped
- 60 ml (4 tbsp.) white vinegar
- 125 ml (1/2 cup) sugar
- 125 ml (1/2 cup) water or orange or apple juice
- Salt and pepper to taste
The chicken
- 4 chicken breasts
- 1 clove garlic, minced
- 30 ml (2 tbsp.) honey
- 15 ml (1 tbsp.) mild smoked paprika
- 1 lemon, juice
- 90 ml (6 tbsp) olive oil
- 15 ml (1 tbsp.) herbes de Provence blend
- Salt and pepper to taste
Toppings
- 4 burger buns
- 60 ml (4 tbsp.) mayonnaise
- Lettuce leaves
- Sliced cheese
Preparation
- Preheat barbecue to high.
- In a saucepan over medium heat, simmer jalapenos, onion, garlic, vinegar, sugar and orange juice (water or apple juice) for 30 to 45 minutes. Check seasoning.
- Cut each chicken breast in half to obtain a total of 8 cutlets.
- In a bowl, combine garlic, honey, paprika, lemon juice, olive oil, herbes de Provence, chicken cutlets and marinate for 10 minutes.
- Cook chicken cutlets on barbecue grill for 4 minutes on each side. Remove and set aside.
- On each burger bun, spread a little chutney, mayonnaise, cutlets, lettuce and cheese slices.
