BURRATA GRILLED MELON
Portions : 4 - Preparation : 10 minutes - Cooking time : 4 minutes
Ingredients
- 1 burrata
- 1 melon, sliced
- 15 ml (1 tablespoon) honey
- 120 ml (8 tbsp.) olive oil
- 4 large slices farmhouse bread
- 60 ml (4 tbsp.) red wine vinegar
- 15 ml (1 tbsp) steak spices
- 3 heirloom tomatoes, cut into large chunks
- 500 ml (2 cups) arugula
- 125 ml (1/2 cup) toasted pistachios, crushed
- 4 to 8 slices cured ham
- Salt and pepper to taste
Preparation
- Preheat a ridged frying pan over high heat, and toast half the melon slices and the spoonful of honey in a little oil for 2 minutes on each side.
- Brush bread slices with olive oil and season with salt and pepper.
- Toast the bread slices in the oven or toaster.
- Meanwhile, in a bowl, combine remaining olive oil, vinegar and steak spices.
- Add the tomatoes and arugula and toss to combine.
- Divide the prepared salad, grilled melon slices and raw melon slices between the plates.
- Cut the burrata into 4 pieces and season with salt and pepper.
- Divide the burrata, pistachios and cured ham between the plates.
- Serve with slices of toasted bread.
