Salmon and passion fruit carpaccio

Ingredients

Passion vinaigrette

  • 2 passion fruits, insides
  • ½ clove garlic, minced
  • 15 ml (1 tbsp) hot mustard
  • 90 ml (6 tbsp) olive oil
  • 1 lime, juice
  • Salt and pepper to taste
  • 300 gr (10 oz) fresh salmon, thinly sliced
  • 2 grapefruits, supremed
  • 45 ml (3 tbsp) sour cream
  • 1/2 leek, julienned
  • 60 ml (4 tbsp) dill, sprigs
  • 15 ml (1 tbsp) pink pepper, crushed

Preparation

  1. Using a hand blender, mix the passion fruits, garlic, mustard, lime juice, olive oil. Check the seasoning.
  2. On each plate, alternately arrange the salmon slices and the grapefruit segments.
  3. Add touches of sour cream, distribute the leek julienne, dill, pink pepper and then the prepared vinaigrette.
