Ingredients
Passion vinaigrette
- 2 passion fruits, insides
- ½ clove garlic, minced
- 15 ml (1 tbsp) hot mustard
- 90 ml (6 tbsp) olive oil
- 1 lime, juice
- Salt and pepper to taste
- 300 gr (10 oz) fresh salmon, thinly sliced
- 2 grapefruits, supremed
- 45 ml (3 tbsp) sour cream
- 1/2 leek, julienned
- 60 ml (4 tbsp) dill, sprigs
- 15 ml (1 tbsp) pink pepper, crushed
Preparation
- Using a hand blender, mix the passion fruits, garlic, mustard, lime juice, olive oil. Check the seasoning.
- On each plate, alternately arrange the salmon slices and the grapefruit segments.
- Add touches of sour cream, distribute the leek julienne, dill, pink pepper and then the prepared vinaigrette.
