Farm-style ribs

FARMHOUSE-STYLE RIBS

Portions : 4 - Preparation : 10 minutes - Cooking time : 130 minutes

Ingredients

  • 1.5 kg (3 lb) Québec farm-style pork ribs
  • 4 garlic cloves, chopped
  • 2 onions, thinly sliced
  • 60 ml (4 tbsp.) dried oregano
  • 60 ml (4 tbsp.) sweet paprika
  • 60 ml (4 tbsp.) tomato paste
  • 750 ml (3 cups) vegetable stock
  • 15 ml (1 tbsp.) Sriracha hot sauce
  • 15 ml (1 tbsp.) Montreal steak spice blend
  • 60 ml (4 tbsp.) cornstarch, diluted in a little water
  • 250 ml (1 cup) brown sugar
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 150°C (300°F).
  2. In a roasting pan, combine ribs, garlic, onions, oregano, paprika, tomato paste, broth, hot sauce, steak spices, salt and pepper. Cover and bake for 2 hours.
  3. Remove and set meat aside.
  4. In a saucepan, collect the sauce and bring to the boil.
  5. Add the cornstarch and brown sugar and, while stirring with a spatula, allow to thicken to a syrupy sauce. Check seasoning.
  6. Preheat barbecue to maximum.
  7. Place the meat on the grill and grill for 1-2 minutes.
  8. Then brush the meat with the sauce and continue cooking on indirect heat, with the lid closed, for 10 minutes.
