FARMHOUSE-STYLE RIBS

Ingredients
- 1.5 kg (3 lb) Québec farm-style pork ribs
- 4 garlic cloves, chopped
- 2 onions, thinly sliced
- 60 ml (4 tbsp.) dried oregano
- 60 ml (4 tbsp.) sweet paprika
- 60 ml (4 tbsp.) tomato paste
- 750 ml (3 cups) vegetable stock
- 15 ml (1 tbsp.) Sriracha hot sauce
- 15 ml (1 tbsp.) Montreal steak spice blend
- 60 ml (4 tbsp.) cornstarch, diluted in a little water
- 250 ml (1 cup) brown sugar
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 150°C (300°F).
- In a roasting pan, combine ribs, garlic, onions, oregano, paprika, tomato paste, broth, hot sauce, steak spices, salt and pepper. Cover and bake for 2 hours.
- Remove and set meat aside.
- In a saucepan, collect the sauce and bring to the boil.
- Add the cornstarch and brown sugar and, while stirring with a spatula, allow to thicken to a syrupy sauce. Check seasoning.
- Preheat barbecue to maximum.
- Place the meat on the grill and grill for 1-2 minutes.
- Then brush the meat with the sauce and continue cooking on indirect heat, with the lid closed, for 10 minutes.
