FAUX SMOKED SALMON
Portions : 4 - Preparation time : 48 hours
Ingredients
- 60 ml (4 tablespoons) coarse salt
- 60 ml (4 tablespoons) sugar
- 10 pink peppercorns, crushed
- 5 ml (1 tsp.) fennel seeds
- 30 ml (2 tbsp.) gin
- 60 ml (4 tbsp.) honey
- 15 ml (1 tbsp.) smoked liquid
- 10 juniper berries, crushed
- 1 bunch dill, leaves removed and chopped
- 2 lemons, zest
- 2 limes, zest
- 300 g (10 oz) salmon fillet center, trimmed and bones removed
Preparation
- In a bowl, combine salt, sugar, pink peppercorns, fennel seeds, gin, honey, smoked liquid, juniper berries, lemon juice and lemon juice.

- Lay out a large sheet of plastic wrap on the work surface.

- and set aside in the fridge for at least 24 hours.
- Remove salmon from plastic wrap. Rinse with cold water to remove spice mixture, pat dry and pat dry
- in a cloth. Set aside on a tray, uncovered, in the refrigerator for 24 hours.
- Just before serving, cut salmon into thin slices with a knife.
