Fake smoked salmon

FAUX SMOKED SALMON

Portions : 4 - Preparation time : 48 hours

Ingredients

  • 60 ml (4 tablespoons) coarse salt
  • 60 ml (4 tablespoons) sugar
  • 10 pink peppercorns, crushed
  • 5 ml (1 tsp.) fennel seeds
  • 30 ml (2 tbsp.) gin
  • 60 ml (4 tbsp.) honey
  • 15 ml (1 tbsp.) smoked liquid
  • 10 juniper berries, crushed
  • 1 bunch dill, leaves removed and chopped
  • 2 lemons, zest
  • 2 limes, zest
  • 300 g (10 oz) salmon fillet center, trimmed and bones removed

Preparation

  1. In a bowl, combine salt, sugar, pink peppercorns, fennel seeds, gin, honey, smoked liquid, juniper berries, lemon juice and lemon juice.

  8. Remove salmon from plastic wrap. Rinse with cold water to remove spice mixture, pat dry and pat dry
  9. in a cloth. Set aside on a tray, uncovered, in the refrigerator for 24 hours.
  10. Just before serving, cut salmon into thin slices with a knife.
