PORK TENDERLOIN WITH PEANUT SAUCE

Ingredients
Peanut sauce
- 125 ml (1/2 cup) crunchy peanut butter
- 250 ml (1 cup) coconut milk
- 60 ml (4 tbsp.) hoisin sauce
- 30 ml (2 tbsp) rice vinegar
- 5 ml (1 tsp.) hot pepper paste (optional)
- salt and pepper to taste
Pork tenderloin
- 1 Québec pork tenderloin
- 30 ml (2 tbsp.) Mycryo cocoa butter or other fat of your choice
- Salt and pepper to taste
Preparation
- In a bowl, blend peanut butter, coconut milk, hoisin sauce and rice vinegar until smooth.
- Add chili paste to taste, a pinch of salt and pepper, mix, check seasoning and set aside.
- Preheat the BBQ to maximum.
- Sprinkle pork tenderloin generously with salt and pepper. Coat with Mycryo butter or the fat of your choice.
- Place the tenderloin on the BBQ grill over direct heat and sear for 2 minutes on each side.
- Turn off the heat on the side where the tenderloin is placed, and continue cooking over indirect heat until the tenderloin is cooked through.
- It's best to reach a core temperature of 70°C (150°F).
- Remove from BBQ. Wrap tenderloin in aluminum foil and let stand for 5 minutes.
- Cut into cubes and serve with prepared peanut sauce.
