Beef and squash stew

BEEF AND SQUASH STEW

Portions : 4 - Preparation time : 10 minutes - Cooking time : 2 hours and 15 minutes

Ingredients

  • 1 l (4 cups) Famille Fontaine stewing beef, cubed
  • 90 ml (6 tablespoons) flour or cornstarch
  • 1 onion, chopped
  • 60 ml (4 tbsp.) canola oil
  • 1 l (4 cups) squash or pumpkin, cubed
  • 1 l (4 cups) baby potatoes
  • 500 ml (2 cups) white beans, cooked
  • 30 ml (2 tbsp.) horseradish
  • 60 ml (4 tbsp.) maple syrup
  • 1 l (4 cups) blonde or red beer
  • 45 ml (3 tbsp.) Montreal steak spice blend
  • 45 ml (3 tbsp.) soy sauce
  • salt and pepper to taste

Preparation

  1. Dredge meat cubes in flour.
  2. In a casserole dish, brown meat and onion in a little oil for 5 minutes.
  3. Add the squash, potatoes and white beans and cook for a further 5 minutes.
  4. Add horseradish, maple syrup, beer, steak spices and soy sauce, reduce heat, cover and simmer for 2 hours. Check seasoning.
