BEEF AND SQUASH STEW
Portions : 4 - Preparation time : 10 minutes - Cooking time : 2 hours and 15 minutes
Ingredients
- 1 l (4 cups) Famille Fontaine stewing beef, cubed
- 90 ml (6 tablespoons) flour or cornstarch
- 1 onion, chopped
- 60 ml (4 tbsp.) canola oil
- 1 l (4 cups) squash or pumpkin, cubed
- 1 l (4 cups) baby potatoes
- 500 ml (2 cups) white beans, cooked
- 30 ml (2 tbsp.) horseradish
- 60 ml (4 tbsp.) maple syrup
- 1 l (4 cups) blonde or red beer
- 45 ml (3 tbsp.) Montreal steak spice blend
- 45 ml (3 tbsp.) soy sauce
- salt and pepper to taste
Preparation
- Dredge meat cubes in flour.
- In a casserole dish, brown meat and onion in a little oil for 5 minutes.
- Add the squash, potatoes and white beans and cook for a further 5 minutes.
- Add horseradish, maple syrup, beer, steak spices and soy sauce, reduce heat, cover and simmer for 2 hours. Check seasoning.
