Pork loin steak with brussels sprouts and bacon

PORK LOIN WITH BRUSSELS SPROUTS AND BACON

Portions : 4 - Preparation : 10 minutes - Cooking time : 15 to 20 minutes

Ingredients

  • 4 Quebec pork loin pavés (1'' thick)
  • 30 ml (2 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 4 slices bacon, chopped
  • 60 ml (4 tbsp.) butter
  • 1 l (4 cups) Brussels sprouts, cleaned and halved
  • 15 ml (1 tbsp.) honey
  • 1 clove garlic, minced
  • 1 onion, thinly sliced
  • 2 sprigs thyme, leaves removed
  • 125 ml (½ cup) dry white wine
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. Season pork loin steaks with salt and pepper.
  3. In a hot skillet, sear meat coated with Mycryo butter or in the fat of your choice, 2 minutes on each side. Remove and set aside.
  4. In the same pan, sear the bacon for 2 minutes. Once crisp, remove and set aside with the meat.
  5. Still in the same pan, add the butter, Brussels sprouts and sauté over high heat.
  6. Add honey, garlic, onion, thyme, white wine and stir.
  7. Add bacon and meat, cover and cook for 8 minutes over medium heat. Check seasoning.
  8. Serve with rice.
