PORK LOIN WITH BRUSSELS SPROUTS AND BACON
Portions : 4 - Preparation : 10 minutes - Cooking time : 15 to 20 minutes
Ingredients
- 4 Quebec pork loin pavés (1'' thick)
- 30 ml (2 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 4 slices bacon, chopped
- 60 ml (4 tbsp.) butter
- 1 l (4 cups) Brussels sprouts, cleaned and halved
- 15 ml (1 tbsp.) honey
- 1 clove garlic, minced
- 1 onion, thinly sliced
- 2 sprigs thyme, leaves removed
- 125 ml (½ cup) dry white wine
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- Season pork loin steaks with salt and pepper.
- In a hot skillet, sear meat coated with Mycryo butter or in the fat of your choice, 2 minutes on each side. Remove and set aside.
- In the same pan, sear the bacon for 2 minutes. Once crisp, remove and set aside with the meat.
- Still in the same pan, add the butter, Brussels sprouts and sauté over high heat.
- Add honey, garlic, onion, thyme, white wine and stir.
- Add bacon and meat, cover and cook for 8 minutes over medium heat. Check seasoning.
- Serve with rice.
