Ingredients
4 Quebec chicken breasts
60 ml (4 tbsp) olive oil
250 ml (1 cup) chorizo, cubed
250 ml (1 cup) chicken broth
1 onion, thinly sliced
2 cloves garlic, minced
750 ml (3 cups) Grelot potatoes, halved
750 ml (3 cups) tomato sauce
250 ml (1 cup) black olives
Salt and pepper to taste
Preparation
In a casserole dish, brown the chicken breasts in olive oil for 2 minutes on each side.
Add the chorizo and cook for another 2 minutes.
Add the broth, onion, garlic, then the potatoes, tomato sauce, olives, cover and cook over low heat for 1 hour.
