Hunter chicken

Ingredients

  • 1 Québec chicken, cut into 8 pieces
  • 1 onion, chopped
  • 60 ml (4 tablespoons) olive oil
  • 3 garlic cloves, chopped
  • 15 ml (1 tbsp.) herbes de Provence blend
  • 250 ml (1 cup) pitted green olives
  • 30 ml (2 tbsp.) tomato paste
  • 125 ml (1/2 cup) capers
  • 125 ml (1/2 cup) flour
  • 500 ml (2 cups) chicken broth
  • 1l (4 cups) homemade tomato sauce
  • 15 ml (1 tablespoon) honey
  • 4 portions cooked pasta
  • Salt and pepper to taste

Preparation

  1. Dredge chicken pieces in flour.
  2. In a saucepan, sauté onion in olive oil.
  3. Add chicken pieces and sauté for 2-3 minutes.
  4. Add the garlic, herbes de Provence, olives and tomato paste and sauté for 2 minutes.
  5. Add honey, broth, tomato sauce and capers, and cook over medium heat for 30 minutes. Check seasoning.
  6. Serve with fresh pasta
