Ingredients
- 1 Québec chicken, cut into 8 pieces
- 1 onion, chopped
- 60 ml (4 tablespoons) olive oil
- 3 garlic cloves, chopped
- 15 ml (1 tbsp.) herbes de Provence blend
- 250 ml (1 cup) pitted green olives
- 30 ml (2 tbsp.) tomato paste
- 125 ml (1/2 cup) capers
- 125 ml (1/2 cup) flour
- 500 ml (2 cups) chicken broth
- 1l (4 cups) homemade tomato sauce
- 15 ml (1 tablespoon) honey
- 4 portions cooked pasta
- Salt and pepper to taste
Preparation
- Dredge chicken pieces in flour.
- In a saucepan, sauté onion in olive oil.
- Add chicken pieces and sauté for 2-3 minutes.
- Add the garlic, herbes de Provence, olives and tomato paste and sauté for 2 minutes.
- Add honey, broth, tomato sauce and capers, and cook over medium heat for 30 minutes. Check seasoning.
- Serve with fresh pasta
