Salmon en croûte

SALMON EN CROÛTE

Portions : 4 - Preparation : 5 minutes - Cooking : 10 minutes

Ingredients

  • 1 lemon, zest
  • 1 lime, zest
  • 250 ml (1 cup) mayonnaise
  • 125 ml (1/2 cup) panko breadcrumbs
  • 125 ml (1/2 cup) walnuts, chopped
  • 5 ml (1 tsp.) sriracha sauce
  • 1 clove garlic, minced
  • 4 salmon steaks
  • 125 ml (1/2 cup) fresh coriander, chopped
  • salt and freshly ground pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200° C (400° F).
  2. In a bowl, combine the zest, mayonnaise, breadcrumbs, walnuts, srirashra sauce and garlic.
  3. On an ovenproof tray lined with parchment paper or a silicone mat, arrange the salmon steaks and cover the top with the prepared mixture.
  4. Bake in the oven for 6 minutes, then broil until the crust is nicely colored.
  5. Before serving, sprinkle the cilantro over the pavés.
