Salmon in puff pastry

Ingredients

  • 1 leek, chopped
  • 60 ml (4 tbsp) olive oil
  • 2 cloves garlic, chopped
  • 2 pinches of cayenne pepper
  • 30 ml (2 tbsp) honey
  • 60 ml (4 tbsp) white balsamic vinegar
  • 1 sheet of puff pastry
  • 4 salmon fillets
  • Salt and pepper to taste

Preparation

  1. Preheat the oven, rack in the center to 200°C (400°F).
  2. In a hot pan, brown the leek in olive oil for 2 minutes.
  3. Add garlic, chili pepper, honey, balsamic vinegar, salt and pepper.
  4. On the work surface, roll out the puff pastry and cut into 4 equal squares.
  5. On each square of dough, place 1 salmon fillet, salt and pepper, spread the leeks on top. Fold the dough over to form a turnover.
  6. On a baking sheet covered with a silicone mat, arrange the pastries and bake for 25 minutes.
  7. Serve with sautéed vegetables.
