Spaghetti carbonara

SPAGHETTI CARBONARA

Portions : 4 - Preparation : 5 minutes - Cooking : 15 minutes

Ingredients

  • 400 g (13 1/2 oz) spaghetti
  • 14 slices bacon, Québec Pork
  • 1 onion, chopped
  • 500 ml (2 cups) 35% cream
  • 6 eggs, yolks (4 for presentation)
  • Grated Parmesan cheese, to taste
  • Salt and pepper to taste

Preparation

  1. Cook pasta al dente in boiling, salted water. Drain and set aside.
  2. Meanwhile, in a fat-free frying pan, brown the bacon slices until crisp. Set aside 4 slices for decoration and chop the rest.
  3. In the same pan, sauté the onion. Then add the chopped bacon and cream, stirring constantly to reduce the cream over low heat.
  4. Just before serving, mix 2 egg yolks in a bowl and add to the pan. Add the pasta and heat over low heat, stirring constantly.
  5. Divide the pasta between the plates, along with grated Parmesan, an egg yolk in a half-shell and a slice of bacon.
