SPAGHETTI CARBONARA

Ingredients
- 400 g (13 1/2 oz) spaghetti
- 14 slices bacon, Québec Pork
- 1 onion, chopped
- 500 ml (2 cups) 35% cream
- 6 eggs, yolks (4 for presentation)
- Grated Parmesan cheese, to taste
- Salt and pepper to taste
Preparation
- Cook pasta al dente in boiling, salted water. Drain and set aside.
- Meanwhile, in a fat-free frying pan, brown the bacon slices until crisp. Set aside 4 slices for decoration and chop the rest.
- In the same pan, sauté the onion. Then add the chopped bacon and cream, stirring constantly to reduce the cream over low heat.
- Just before serving, mix 2 egg yolks in a bowl and add to the pan. Add the pasta and heat over low heat, stirring constantly.
- Divide the pasta between the plates, along with grated Parmesan, an egg yolk in a half-shell and a slice of bacon.
