Information on forged knives

Forged knives are knives made from a single piece of metal, with the blade blending naturally into the handle, without welding, and the junction between the two marking what is known as the bolster. Cut knives, as their name suggests, are cut from a sheet of steel and have their handles attached separately. Forged and cut knives each have their own advantages. The choice of one or the other is primarily a matter of personal preference.

The forged blade of a Victorinox knife contains more carbon, making the steel harder and preserving its sharpness. Because the knife is forged in one piece, it's harder for your hand to slip from the handle onto the blade. What's more, forged knives tend to be heavier, giving them a pleasant weight and balance in the hand. And their perfectly designed lines are a testament to their exceptional quality. A good forged chef's knife is both prestigious and inspiring. It reflects the joy that lovers of the kitchen can feel when working with good tools.

Forged blades generally stay sharp longer, but they are also more difficult to resharpen, and must be sharpened with a diamond or ceramic sharpening tool, as the tool must be harder than the blade it is sharpening.
