Swiss cheese burger with bacon caramel

  • 1 lb. lean ground beef
  • 4 slices XXXXX cheese
  • 4 brioche burger buns
  • 4 tablespoons mayonnaise
  • 1 tbsp beef broth concentrate
  • Salt and pepper to taste

Bacon caramel

  • 8 slices bacon, finely chopped
  • 1 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 8 tablespoons maple syrup
  • 1 tablespoon horseradish
  • salt and pepper to taste

  1. Preheat BBQ to maximum
  2. In a bowl, mix meat with beef bouillon concentrate.
  3. Add pepper and shape into burger patties large enough for buns.
  4. In a bowl, mix the bacon with the garlic, syrup, horseradish, red onion and a little salt and pepper.
  5. Cook the bacon mixture on a BBQ mat for approx. 5 min. until the mixture is nicely stewed and caramelized.
  6. Set aside.
  7. Sear the meat for 2 to 3 min on each side and continue cooking indirectly for a few minutes, depending on desired doneness.
  8. Toast burger buns.
  9. Top buns with mayonnaise, add meat, top with bacon mixture, add slices of local Swiss cheese and close burger with bun tops.


Cheese Grill with cheese curds :

  • 8 slices sandwich bread
  • 4 tablespoons butter
  • 2 cups cheese curds
  • 4 tbsp cranberry jam
  • 4 slices cooked ham
  1. Preheat BBQ to medium.
  2. Butter bread slices on 1 side.
  3. Spread jam on 4 slices, then add half the cheese curds
  4. Place a slice of ham on each sandwich, then top with the remaining cheese.
  5. Close the sandwiches and cook indirectly (off the heat, with the lid closed) for 5 to 8 min.
  6. Turn sandwiches over halfway through cooking to brown each side.

Grilled Cheese Bites

  • 1 block grilled cheese
  • 4 basil leaves, finely chopped
  • 4 tablespoons olive oil
  • 2 tablespoons honey
  • 12 cherry tomatoes, halved
  1. Preheat the BBQ to maximum.
  2. Cut cheese into thick slices.
  3. Sear the cheese pieces on the BBQ for 2 to 3 min on each side.
  4. Cut cheese into large cubes.
  5. In a bowl, toss cherry tomatoes with olive oil, honey and basil.
  6. Garnish small serving dishes with cheese cubes, add tomato mixture and serve.
