CHICKEN WINGS WITH STEAK SPICES AND BROWN SUGAR
Portions : 4 - Brining : between 4 and 24 hours - Preparation : 15 minutes - Cooking : 22 to 23 minutes
Ingredients
- 12 to 24 Québec chicken wings
Brine
- 250 ml (1 cup) brown sugar
- 60 ml (4 tbsp.) El-ma-mia Strong Blend steak spice blend
- 15 ml (1 tbsp.) fine salt
- 500 to 750 ml (2 to 3 cups) water
- 125 ml (1/2 cup) white vinegar
- 1 bay leaf
Sauce
- 125 ml (1/2 cup) ketchup
- 30 ml (2 tbsp.) steak spice blend El-ma-mia hot mix
- Qs hot sauce to taste
Preparation
- In a bowl, combine the brown sugar, El-ma-mia Strong Blend, salt, water, vinegar and bay leaf. When the brown sugar and salt have dissolved, add the chicken wings and brine for at least 4 hours and no more than 24 hours.
- Preheat barbecue to maximum.
- In a bowl, combine ketchup, El-ma-mia Hot & Spicy Mix and hot sauce to taste.
- Remove from brine and pat dry, then coat chicken wings with prepared sauce.
- Turn off the heat on one side of the barbecue and set the other side to medium.
- Place the chicken wings on the grill with the fire off, close the lid and cook for 20 minutes (indirect cooking).
- With the lid open and the barbecue set to maximum, continue cooking for 2 to 3 minutes, to color the wings.
