INGREDIENTS
- 1 bunch of asparagus
- 60 mL (4 tbsp.) butter
- 1 clove garlic, chopped
- 60 mL (4 tbsp.) balsamic vinegar
- 30 mL (2 tbsp) honey
- 4 eggs
- 30 mL (2 tbsp) white vinegar
- 60 mL (4 tbsp) Parmesan cheese, shaved
- 125 mL (1/2 cup) bread crumbs
- 1 shallot, finely chopped
- 4 slices bacon, cooked crisp and chopped
- salt and pepper to taste
INSTRUCTIONS

In a hot skillet, sauté asparagus in melted butter for 2 to 3 minutes over high heat.

Add garlic, balsamic vinegar, honey, salt and pepper. Check seasoning.

Break each egg into an individual container.

In a saucepan of simmering water, add the white vinegar, keep simmering, place each egg one by one and let cook for 3 minutes.

Remove each egg and set aside on paper towels.

Place the asparagus, Parmesan shavings, croutons, shallots, bacon and an egg on each plate, season lightly and serve.
