AVOCADO, EGG AND SALMON
Portions : 4 - Preparation : 5 minutes - Cooking time : about 20 minutes
Ingredients
- 4 Québec eggs
- 2 avocados, halved
- 60 ml (4 tablespoons) caramelized onions
- 4 slices smoked salmon
- 1 pinch chili flakes
- 125 ml (1/2 cup) cheddar cheese, grated
- Salt and pepper to taste
Caramelized onions
- 2 red onions, thinly sliced
- 45 ml (3 tbsp.) olive oil
- 15 ml (1 tbsp.) honey
- 2 garlic cloves, minced
- 30 ml (2 tbsp) white vinegar
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- In a hot skillet, sauté onions in olive oil for 2 to 3 minutes.
- Add honey, garlic and vinegar, season lightly, lower heat and sauté for a further 5 minutes.
- Lightly hollow out the inside of each avocado half.
- Place the avocado halves on a baking sheet lined with a silicone mat. In each hollow, place 1 tablespoon of caramelized onions, a slice of smoked salmon, an egg, the chili pepper and cheese and bake for 10 to 12 minutes.
- Serve with a salad.
