Avocado, egg and salmon

AVOCADO, EGG AND SALMON

Portions : 4 - Preparation : 5 minutes - Cooking time : about 20 minutes

Ingredients

  • 4 Québec eggs
  • 2 avocados, halved
  • 60 ml (4 tablespoons) caramelized onions
  • 4 slices smoked salmon
  • 1 pinch chili flakes
  • 125 ml (1/2 cup) cheddar cheese, grated
  • Salt and pepper to taste

Caramelized onions

  • 2 red onions, thinly sliced
  • 45 ml (3 tbsp.) olive oil
  • 15 ml (1 tbsp.) honey
  • 2 garlic cloves, minced
  • 30 ml (2 tbsp) white vinegar
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a hot skillet, sauté onions in olive oil for 2 to 3 minutes.
  3. Add honey, garlic and vinegar, season lightly, lower heat and sauté for a further 5 minutes.
  4. Lightly hollow out the inside of each avocado half.
  5. Place the avocado halves on a baking sheet lined with a silicone mat. In each hollow, place 1 tablespoon of caramelized onions, a slice of smoked salmon, an egg, the chili pepper and cheese and bake for 10 to 12 minutes.
  6. Serve with a salad.
