Ballotin of Québec pork tenderloin

BALLOTIN OF QUEBEC PORK TENDERLOIN

Portions : 4 - Preparation : 10 minutes - Cooking : 15 minutes

Ingredients

  • 2 Québec pork tenderloins
  • 250 ml (1 cup) Cheddar cheese, grated
  • 60 ml (4 tablespoons) apricot jam
  • 1 shallot, finely chopped
  • 2 sprigs thyme, leaves removed
  • 12 slices bacon

Preparation

  1. Preheat the BBQ to maximum.
  2. Cut the pork tenderloins in half to obtain two sections.
  3. Using a knife, cut the pork tenderloin in half along most of its length, to create a cavity that you can fill (like a wallet).
  4. Mix the grated cheese, jam, shallot and thyme in a bowl.
  5. Garnish the pork sections. Season with salt and pepper.
  6. Roll the bacon slices around each piece.
  7. Place on the grill and brown for 2 minutes on each side, then continue cooking, indirectly, with the lid closed, for 8 minutes.
