BALLOTIN OF QUEBEC PORK TENDERLOIN

Ingredients
- 2 Québec pork tenderloins
- 250 ml (1 cup) Cheddar cheese, grated
- 60 ml (4 tablespoons) apricot jam
- 1 shallot, finely chopped
- 2 sprigs thyme, leaves removed
- 12 slices bacon
Preparation
- Preheat the BBQ to maximum.
- Cut the pork tenderloins in half to obtain two sections.
- Using a knife, cut the pork tenderloin in half along most of its length, to create a cavity that you can fill (like a wallet).
- Mix the grated cheese, jam, shallot and thyme in a bowl.
- Garnish the pork sections. Season with salt and pepper.
- Roll the bacon slices around each piece.
- Place on the grill and brown for 2 minutes on each side, then continue cooking, indirectly, with the lid closed, for 8 minutes.
