Christmas cookies

Ingredients

  • 250 ml (1 cup) unsalted butter, soft
  • 170 ml (2/3 cup) powdered sugar
  • 1 large pinch salt
  • 1 lemon, zest
  • 5 ml (1 tsp.) vanilla extract
  • 3 ml (1/2 tsp.) cinnamon, ground
  • 3 ml (1/2 tsp.) ginger, ground
  • 3 ml (1/2 tsp.) nutmeg
  • 1 pinch clove powder
  • 500 ml (2 cups) flour

Preparation

  1. In a bowl, mix butter, sugar, salt, zest, vanilla, cinnamon, ginger, nutmeg and cloves until smooth.
  2. Stir in the flour and continue mixing for a few seconds.
  3. Wrap the dough in plastic film and leave to rest in the fridge for 30 minutes.
  4. Preheat oven, rack in center, to 160°C (325°F).
  5. Using a rolling pin, roll out the dough on the work surface to a thickness of 0.5 cm.
  6. Using a cookie cutter of the desired shape, cut out the dough.
  7. Place the dough pieces on an ovenproof baking sheet lined with a silicone mat and bake for 18 minutes.
  8. Place on a cooling rack and decorate to taste.
