Almond and cinnamon Christmas cookies

Preparation and chilling: 35 to 40 minutes

Cooking time: 10 to 12 minutes

Ingredients

  • 250 ml (1 cup) soft, unsalted butter
  • 250 ml (1 cup) sugar
  • 250 ml (1 cup) powdered sugar
  • 1 egg
  • 1 pinch salt
  • 15 ml (1 tbsp) bitter almond extract
  • 3 ml (1/2 tsp.) ground cinnamon
  • 1 lemon, zest
  • 375 ml (1 1/2 cups) flour
  • 375 ml (1 1/2 cups) almond powder

Preparation

  1. Preheat oven, rack in center, to 180°C (350°F).
  2. In a bowl, using a mixer, blend the butter, sugar and powdered sugar until smooth and creamy.
  3. Add the egg, then the salt, bitter almond extract, cinnamon, lemon zest, flour and almond powder.
  4. When the mixture is smooth, shape into balls the size of golf balls.
  5. Place the balls on an ovenproof tray lined with parchment paper or a silicone mat, and set aside in the fridge for 30 minutes.
  6. Then bake in the oven for 8 to 10 minutes.
  7. Let cool and decorate with powdered sugar.
