Classic pork blanquette

Ingredients

  • 1 kg (2 lb) Québec Stewing Pork, cubed
  • 2 leeks, thinly sliced
  • 90 ml (6 tablespoons) olive oil
  • 500 ml (2 cups) button mushrooms, cubed
  • 2 garlic cloves, chopped
  • 500 ml (2 cups) carrot, sliced
  • 1.5 l (6 cups) vegetable stock
  • 4 sprigs thyme, leaves removed
  • 1 sprig rosemary, leaves removed
  • 1 bay leaf
  • 60 ml (4 tbsp.) cornstarch, diluted in a little water
  • 1 lemon, juice removed
  • 125 ml (1/2 cup) 35% cream
  • Salt and pepper to taste

Preparation

  1. In a saucepan, brown pork cubes and leeks in olive oil. Season with salt and pepper.
  2. Add mushrooms, garlic, carrots, stock, thyme, rosemary and bay leaf, cover and simmer for 2 hours.
  3. Add the cornstarch and lemon juice and bring to the boil, stirring constantly.
  4. Add the cream. Check seasoning.
