Ingredients
- 1 kg (2 lb) Québec Stewing Pork, cubed
- 2 leeks, thinly sliced
- 90 ml (6 tablespoons) olive oil
- 500 ml (2 cups) button mushrooms, cubed
- 2 garlic cloves, chopped
- 500 ml (2 cups) carrot, sliced
- 1.5 l (6 cups) vegetable stock
- 4 sprigs thyme, leaves removed
- 1 sprig rosemary, leaves removed
- 1 bay leaf
- 60 ml (4 tbsp.) cornstarch, diluted in a little water
- 1 lemon, juice removed
- 125 ml (1/2 cup) 35% cream
- Salt and pepper to taste
Preparation
- In a saucepan, brown pork cubes and leeks in olive oil. Season with salt and pepper.
- Add mushrooms, garlic, carrots, stock, thyme, rosemary and bay leaf, cover and simmer for 2 hours.
- Add the cornstarch and lemon juice and bring to the boil, stirring constantly.
- Add the cream. Check seasoning.
