Cambodian-style grilled beef

CAMBODIAN GRILLED BEEF

Portions : 4 - Preparation : 10 minutes - Marinade : 10 minutes - Cooking time : 5 to 6 minutes

Ingredients

  • 600 g (20 ½ oz) beef round inside, cubed or thinly sliced
  • 1 shallot, cubed
  • 1 stalk lemongrass, cut into sections
  • 3 cloves garlic
  • 45 ml (3 tbsp.) fresh ginger, peeled and chopped
  • 6 Kaffir lime leaves (main vein removed)
  • 1 red bell pepper, cubed
  • 75 ml (5 tbsp.) galangal, peeled and chopped
  • 75 ml (5 tbsp.) fresh turmeric, peeled and chopped
  • 45 ml (3 tbsp.) Ktchiey (optional), peeled, inner fiber removed and chopped
  • 75 ml (5 tbsp.) fish sauce
  • 30 ml (2 tbsp.) Sambal Oelek or hot pepper
  • 15 ml (1 tbsp.) cracked pepper
  • 90 ml (6 tbsp) sugar
  • 60 ml (4 tbsp) canola or other oil
  • 60 ml (4 tbsp.) water

Preparation

  1. In the bowl of a food processor, except for the beef, grind all ingredients together.
  2. Once finely puréed, in a bowl, add to the beef and mix.
  3. Leave to marinate for 10 minutes.
  4. In a very hot pan, over high heat, brown the meat in the fat of your choice.
  5. Cook for around 2 minutes on each side, depending on the thickness of the slices or cubes.
  6. Serve with rice and vegetables of your choice.

Ps: This recipe can easily be cooked on the bbq.
