Salmon bonbon with maple syrup and sautéed rice

SALMON BONBON WITH MAPLE SYRUP AND SAUTÉED RICE

Portions : 4 - Preparation : 10 minutes - Cooking : 15 minutes

Ingredients

  • 30 ml (2 tablespoons) miso
  • 120 ml (8 tablespoons) maple syrup
  • 60 ml (4 tablespoons) olive oil
  • 1 clove garlic, minced
  • 4 salmon steaks, cut in 2
  • 1 onion, thinly sliced
  • 2 red peppers, julienned
  • 250 ml (1 cup) frozen peas
  • 4 portions cooked rice
  • 15 ml (1 tbsp.) Sambal Oelek chili paste
  • Salt and pepper to taste

Preparation

  1. In a bowl, combine miso, maple syrup, olive oil and garlic.
  2. In a hot frying pan, sear the salmon steaks in a little oil for 2 minutes on each side.
  3. Reduce the heat and add the prepared mixture to the salmon to coat the pieces, continuing to cook for a further 5 minutes. Remove and set aside.
  4. In the same pan, sauté the onion, red peppers and peas for 2 minutes.
  5. Add the rice, Sambal Oelek and stir. Check the seasoning.
  6. Serve the salmon with the prepared sautéed rice.
